Rain, Rain Go Away!

As April settles in bringing lots of rainy days, it is hard to stay focused on the exciting days ahead. Easter (one of my favorite holidays) is at the end of the month followed by the busy final weeks of classes and then graduation. While graduating college is upsetting because we must part from the people we’ve spent every wakening moment with for the past four years, I am ready to start a new chapter (whatever it is) in my life.

Anyway, I am trying to see past the rain clouds and look for that single beacon of sunlight; however, it isn’t coming from the sky, so it obviously shines in the form of cupcakes. Each month Georgetown Cupcake bakes up special flavors. This month three additional cupcakes that surfaced the menu are Cherry Blossom, Hummingbird, and Easter.

Cherry Blossom (appropriate for DC’s Cherry Blossom Festival) is a classic vanilla cupcake baked with fresh cherries and topped with vanilla cream cheese frosting. The Humingbird cupcake is made with fresh banana, pineapple, and pecans and is topped with vanilla cream cheese frosting and chopped pecans. The Easter cupcake comes in either vanilla or chocolate and is frosted with green “grassy” icing and a special seasonal bunny fondant decoration.

While the Cherry Blososm and Hummingbird cupcakes resemble other Georgetown Cupcake’s, it is nice to see a little change up with the Easter cupcake. Not only is the frosting bright green,  but also the playful piped icing will definitely stand out among all the other signature swirled cupcakes. So if you’re in the DC or Bethesda area I would suggest picking up these special April cupcakes because they only come out once a year!


Easter Eggs. Easter Bunny. Easter Cupcakes?

The Spring season is finally upon us and with Easter Sunday exactly one month away it doesn’t surprise me that Crumbs has released its Easter cupcake collection. These treats are complete with their pastel decorations and will definitely be an Easter dessert pleaser.

With the exception of one cupcake covered in chocolate frosting, pretty in pink vanilla cream cheese heaven tops and fills these chocolate, vanilla, and Peep vanilla cupcakes to perfection. The bunny cookies, mini marshmellows, jelly beans, and colorful sprinkles not only give these cupcakes innocent appeal, but also add to that delicious original Crumbs taste.

These cupcakes are totally fitting for the season and will get you in a great mood (because this rainy weather certainly isn’t helping). The next time I’m home, which coincidently will be for Easter, I will be making a stop at Crumbs to try out some of these signature cupcakes.

The collection is also available in cute minis, so I say get a bunch and whoever finds the most eggs gets an extra cupcake!

Delicious Dessert Hummus!

After my friend found this hummus recipe, I decided to try it out and it was totally worth it!

Chocolate Chip Dessert Hummus

Not only was it simple to make (aside from peeling the individual chick peas), but it tasted great and has a strong resemeblence to cookie dough.

I would reccommend eating it with graham crackers or for a healtier choice celery sticks.
2 cups chickpeas
1/4 cup natural peanut butter
1/4 cup + 2 tablespoons maple syrup
1/2 Tablespoon vanilla extract
1/4 cup chocolate chips

(I added more peanut butter to mine for a richer taste.)

Drain, rinse, and peel the chickpeas
In a food processor combine the chickpeas, peanut butter, maple syrup, and vanilla
Mix until smooth and creamy
Then put the hummus into a bowl
Add the chocolate chips and serve!

Original Carrot Cake Cupcakes

Carrot Cake Cupcakes

Serves 24 cupcakes

3 cups grated carrots
4 eggs
2 cups sugar
1 1/2 cups oil
2 cups flour
2 tsps. baking soda
2 tsps. cinnamon
1 tsp. salt
1 cup walnuts
1/2 cup raisins
Preheat oven 350, bake for 20-25 min
Grate carrots and set aside
In a bowl beat eggs, sugar, and oil until creamy
Add flour, baking soda, cinnamon, and salt and mix thoroughly
Stir in carrots, walnuts, and raisins.

Once cupcakes cool frost with cream cheese frosting.

Cream Cheese Frosting

2 packages of cream cheese at room temp.
1 stick of butter softened
1 teaspoon of vanilla
2 ½-3 cups of confectionery sugar (depends how sweet you like it)

Using an electric mixer, mix the cream cheese, butter, and vanilla together until smooth
Then gradually mix the sugar in one cup at a time
Mix until fluffy!
