Carrot Cake Cupcakes

Serves 24 cupcakes

3 cups grated carrots
4 eggs
2 cups sugar
1 1/2 cups oil
2 cups flour
2 tsps. baking soda
2 tsps. cinnamon
1 tsp. salt
1 cup walnuts
1/2 cup raisins
Preheat oven 350, bake for 20-25 min
Grate carrots and set aside
In a bowl beat eggs, sugar, and oil until creamy
Add flour, baking soda, cinnamon, and salt and mix thoroughly
Stir in carrots, walnuts, and raisins.

Once cupcakes cool frost with cream cheese frosting.

Cream Cheese Frosting

2 packages of cream cheese at room temp.
1 stick of butter softened
1 teaspoon of vanilla
2 ½-3 cups of confectionery sugar (depends how sweet you like it)

Using an electric mixer, mix the cream cheese, butter, and vanilla together until smooth
Then gradually mix the sugar in one cup at a time
Mix until fluffy!
